Beth's Bachelorette Bash

This past weekend I had the opportunity to go with my sweet friend, Beth, to Nashville for her bachelorette party. It was SO MUCH FUN! I'm still not back to my usual sleep schedule. We traveled on Friday and that night had a little lingerie shower and party for the bride-to-be. We then hit the town and went to the honky tonks. I just love the atmosphere of Nashville. It is laid back, but still has that city feel with tons to see and do. I'm really bad at describing the city. I just know if I'm going to Nashville it's bound to be a good time! Here are a few snapshots of the weekend and the beautiful bride-to-be!

A toast to Beth! Cheers!

She was so excited to open that present!
I thought this was the cutest wrapped present ever!!

Beth had a band dedicate a song to her........Sweet Home Alabama of course!

A few of the girls.....we dressed in all black with pink necklaces and Beth wore pink! Perfect!

A Cupcake for my cupcake

I hope everyone had a very happy Valentine's Day! Ours was a treat at the Ondocsin house. Brian and I decided to stay in this Valentine's to try and save a little $$$. We are broke newlyweds after all. I cooked what sounded like an extravagant meal, but it was actually really easy. I know some of you are out there thinking.....Calley, you always say it is easy, but it's not to me.......well fret no more because this meal was TRULY EASY!!

Our Valentine's Menu:
Shrimp and Scallop Lasagna
Garlic Bread
Garden Salad
Red Velvet Cupcakes

The hardest part about the shrimp and scallop lasagna was purchasing the seafood! Seriously! It's not something I purchase too often, but I don't think you can go wrong by asking for a pound of shrimp and a pound of scallops at the grocery store.
If you would like this recipe, please click here. I give all my credit to my dear friend, Paula.

Now for the real treat.......The Cupcakes!

Just look at this creamy beauty. Yum! I had to share this recipe with you. I've discovered that homemade icing doesn't always turn out like that kind in the container. I don't know if it has to do with the moisture in the air or what. If someone out there knows please do tell! Anyway, I found this recipe for red velvet cupcakes and decided to give it go in true Valentine-themed fashion. This was the most delicious cream cheese frosting. It was so creamy, so smooth, so incredibly easy to whip up. I plan to try this icing next on a carrot cake for Easter. That will be a surprise to Mr. Brian unless he decides to venture over to my blog before then!
Well enough swooning over the best icing ever. Here is the recipe for all to enjoy!

Cream Cheese Frosting
Ingredients:
1 pkg. (8 oz) cream cheese, softened
1/2 cup butter or margarine, softened
1 pkg. (16 oz) powdered sugar (about 4 cups)
1 cup thawed Cool Whip whipped topping

Directions:
Beat cream cheese and butter in large bowl with mixer until well blended. Gradually beat in sugar. Whisk in Cool Whip.

That's all there is too it. My guess is the cool whip is the secret ingredient that keeps this frosting so fluffy. You can thank me for the recipe later. I'm going to go eat a cupcake now!
